Moscato grapes, which are
the most smelly and the sweetest among the
Piedmontese vines, give an optimum passito wine,
to be tasted at the end of the meal with friends.
It is composed exclusively by Moscato vine, whose
grapes are left near the plant until the first
week of November, so that they can loose naturally
their part of water, and leave a higher sugar
concentration. Only the best grapes, which are
smelly, can be part of the vintage which is
carried out manually and carefully. After the
vinification, the maceration occurs for eight
months in small casks, and then there is a
refining in bottles for six months. Its colour is
an intense golden yellow; its smell is wide,
intense, with a characteristic musky odour; its
taste is sweet, harmonic, velvety, aromatic.
