Wine is a hydro-alcoholic
solution which consists of substances contained in grapes
(i.e. water, glucose, fructose, tartaric acid, citric and
malic acid, tannins and colouring substances, albumin,
sorbitol, inositol, pentose, mineral substances, vitamins
and enzymes) and substances due to must and marc
fermentation (i.e. ethylic alcohol, glycerine,
acetyl-methyl-carbinol, acetic acid, succinic and lactic
acid, superior fat acid, aldehyde esters and carbon
dioxide).
